This work aimed to evaluate the microbiological quality of pasteurized goat milk processed in
the mini-mill processed in mini silver plant, located in the Cariri region, Brazil. In june 2015,
january 1, 2016, were collected 30 pasteurized goat milk samples whose quality was assessed
through microbiological parameters as for mesophilic count, coliforms at 35ºC and 45ºC
coliforms. The results of the analysis indicated that of the 30 analyzed samples 11 (36.6%)
showed contamination to mesophilic, and related to the microorganisms coliforms at 35ºc 6
(20%) samples were positive and coliforms at 45 ° C contamination occurred in 2 (6.6%).
indicating that the majority of samples did not attended the minimum requirements according
the legislation, being unsatisfactory for consumption
