Abstract

The organic food production, like organic milk, is harmonious with the environment and human health. The advance in producing with sustainability needs hygiene and food security.

From the point of view of health, the negative aspects of organic milk can be the superior prevalence of subclinical mastitis, superior SCC, antimicrobial and other substances residues in milk and micotoxin in food animal. The positives aspects can be the superior antimicrobial sensibility, inferior prevalence of clinical mastitis and inferior nitrate and nitrite levels in milk. The milk production, the government control of the milk quality and the certification of the agencies must be improve in Brazil for the satisfactory food security. The difficulty in maintaining the health of the herd could be minimized with stricter hygiene and dissemination of complementary veterinary medicine, like acupuncture, homeopathy and herbal medicine.
