EFECTOS DE LA NUTRICIÓN, EDAD AL DESTETE Y PRESENCIA DE MASTITIS SOBRE LA CALIDAD DE LA LECHE Y EL CALOSTRO DE OVEJAS

Veintinueve ovejas multíparas de la raza Santa Inés, todas con el mismo número de partos
fueron sometidas a cuatro tratamientos a partir del 5º mes de gestación, en un diseño factorial
2 X 2 (nivel de nutrición y edad al destete) y delineamiento enteramente casualizado, siendo:
1: dieta compuesta apenas por ensilado; destete a los 45 días; 2: dieta compuesta por ensilado
y concentrado; destete a los 45 días; 3: dieta a base de ensilado; destete a los 70 días y 4: dieta
compuesta por ensilado y concentrado; destete a los 70 días. Se colectaron muestras de
calostro después del parto, y a las 24 y 48 horas subsiguientes. En el calostro y en la leche
fueron analizados, los contenidos de: sólidos totales, proteína, lactosa y grasa. Hubo efecto
del alimento para grasa, proteína y sólidos totales del calostro. Así el grupo que era
alimentado con ensilado y concentrado presentó valores menores con relación a estos
parámetros. En el porcentaje de grasa de la leche se observaron valores mayores a los 70 días
(5,51%) que a los 45 días (4,32%) después del destete. La composición química de la leche
fue próxima a los valores obtenidos para las razas especializadas en producción de leche. La
mastitis sub-clínica no afectó la calidad de la leche.
